Orach     (Garden Orache, Mountain Spinach, French Spinach)   (Atriplex hortensis)   

An excellent spinach substitute, with large triangular leaves. Flavor similar to spinach or swiss chard. Pick young leaves. Can be eaten fresh or cooked. Tall plant, about 1,5 m high, yielding leaves all summer long. Tolerates heat better than spinach. Also called French Spinach or Mountain Spinach. Orach
Purple    (Atriplex hortensis, "purple savoyed")                      

Beautiful ornamental variety,
with slightly crinkled purple leaves. Orach is a great spinach substitute, with a flavor similar to swiss chard or spinach. Leaves can be cooked like spinach and they retain their color. Production is spread out all season. Pick smaller leaves for extra tenderness. Tall plant, about 1,5  m high. Striking plant in the vegetable garden. Click thumbnails for close-ups. About a quarter of seedlings will sprout green (select purples for final planting).

  Arugula - Roquette      (Eruca sativa)

Small leaves with pleasant peppery flavor. Nice in salads. Can also be cooked or used to make pesto. 30-50 days. Full sun (spring-fall), shade (summer).

Swiss Chard Bright Lights     (Beta vulgaris, var. cycla)

Colorful chard with brightly colored stems: red, orange, yellow, white, etc. Sometime used as an ornamental. Can be grown all season. Nice spinach-beet flavor. Cook like spinach. Pick outside leaves. 50 cm high. 60 days.

Swiss Chard Lucullus  

Large 50-cm leaves with white stems that are used like spinach. Can be grown all season. Tolerant to some shade. Nice spinach alternative. 50 days.

Cabbage Michihili

Chinese cabbage with long cylindrical heads more than 45 cm high. Tight heads with dark green external leaves and large white stems that are crispy. Crispy hearts. Nice chinese cabbage flavor. Salads or stir fries. 75 days.

Palm Cabbage "Black from Tuscany"  (Cavolo Laciniato  "Nero di Toscana")

Also called Italian Kale, this variety has long blue-green leaves forming a crown on top of a long stem. Looks like a small palm tree, hence the name. Leaves are picked after the first frosts, when they are extra tender and flavorful. Young leaves and shoots can also be harvested during the main season. Prepare and cook like cabbage. Popular in Tuscany where it is used in soups and stews. Also an ornamental plant, for its exotic look. Quite frost resistant. Can be grown until late into the season (November). 60 to 100 cm high. Full sun.

Classic variety with dark green, thick leaves. 15-20 cm long. Best for spring and fall. 45 days.

Red Malabar Spinach    (Basella alba)

Thick tender leaves with real spinach taste. As opposed to common spinach, this tropical species thrives in the summer heat. Red veined leaves with purple undersides. Can be grown in a pot. Needs a support for climbing. Height: 1,5m or more. Young leaves are more tender. Nice in soups. Good ornamental plant too.

Endive Green Curled Ruffec   (Escarole)

Endive type with finely divided leaves. Large plants, about 45 cm wide. Blanch leaves by covering them with newspaper for a week or two. 90 days.

Kale Red

Mustard type plant with long 40 cm leaves and purple stalks. Peppery cabbage flavor like other mustards, but less pronounced. Use like mustard greens. 50 days.

  Mustard Red Giant       

Popular asian mustard with large, thick, savoyed purple leaves. Sharp, peppery taste reminiscent of horseradish or wasabi. Can be picked extra young for baby leaf mix salads or later for stir fries, soups and other dishes. For a less intense flavor, cook the leaves (steam, stir fry, etc.). Both tolerant to heat and cold temperatures. Color intensifies during fall and turns from reddish bronze to a darker purple hue. Nice ornamental, can be planted alongside other veggies such as kale, palm cabbage, etc. Leaves can reach up to 30 cm, but better when picked at half this size.

Pac Choi

Interesting oriental vegetable used in stir fries. The leaves have large petioles which are tender and crunchy. The green part of the leaves have a peppery, cabbage-like taste. Prefers the cooler temperature of spring and fall. Height: 1 foot (30 cm).
